When I started cooking over 25 years ago, it was a matter of trying the family recipes that had been skilfully perfected over the years and handed down the generations.
These dishes have their own distinctive flavour and aroma which cannot be derived from curry powder but only from the spices which are prepared each day, individually for each dish. The art of blending and preparation of spices is centuries old and is indispensable to Indian Cuisine.
With the fiery south Indian style of cooking using coconut, tamarind and chilli and a variety of gravies with yogurt. Fresh spices and nuts from North. The collection of recipes includes an array of dishes from the beautiful coastline of Kanyakumari, to the snow peaked mountains of Kashmir. I am really excited to bring all of these unique, tantalizing experiences together. I am sure my menu will cater to all palates.
